Dry Vermouth Cocktails - Vermouth Mary 

Vermouth Mary: No.3 S.E Dry Vermouth, Spiced Tomato Water, Tabasco

This is a lighter more refreshing version of a Bloody Mary retaining the body and flavour of the original, but removing the heavy texture of the tomato juice and weight and heat of vodka.

Prep sounds hard but in reality it is remarkably easy and hard to get wrong. The effort is well worth the reward

 

Ingredients

  • 75ml London Vermouth Company No.3 S.E Dry

  • 75ml Spiced Tomato Water

  • Baby Cucumber Spear

  • Tabasco

  • Pickled ginger

Method

·         Filled chilled glass with large ice cubes pour in vermouth and tomato water, stir.

·         Garnish with cucumber, pickled ginger & tabasco sauce.

Spiced Tomato Water (makes 1.25 litres)

  • 2kg beefsteak tomatoes (no stems)

  • 10 fresh celery leaves

  • 2 bird’s eye chilies (no stems)

  • 10g sea salt flakes

  • 20ml sherry vinegar

  • 2cm cube of fresh horseradish

Blitz in food processor then line a fine mesh with muslin and suspend over bowl for 2-3 hours. Pour into sterilised bottle – can be stored in fridge for a week
