Red Vermouth Cocktails: The Pepito Spritz
Our Pepito is based on Tom Finnon’s Oloroso Spritz from the legendary Hedonist bar in Leeds. A Sbaliati Negroni inspired variation on Aperol Spritz is designed to be a sunshine drink with more bitter flavours.
Our version is named after the Pepito Bar in Kings Cross famed for its Oloroso sherries & Jerez bodega vibe. We have used Cava vs Prosecco in the original for more dry notes to contrast the Oloroso sherry.
Ingredients
· 40ml London Vermouth Company No. 2 Camille’s Red,
· 20ml Oloroso Sherry,
We like González Byass Matusalem Oloroso as it has a nose of nuts & coffee, a rich chocolatey palate & long spiced finish.
· 75ml Cava
Conde de Haro Cava’s floral & apple notes work well here
· 25ml (light) Tonic Water
We like use Bermondsey Tonic Water as it uses Cinchona bark in its natural form which makes the tonic less harsh than traditional alternatives.
· Dried or fresh pink grapefruit slice.
Method
· Pour ingredients in order into a chilled large burgundy glass over ice.
· Top with tonic water & garnish with pink grapefruit.
